Summer is right around the corner, and I simply can’t wait to explore the farmer’s markets and start enjoying the beautiful bounty of the season.

  1. My favorite recipe using carrots is carrot cake. I don’t have the recipe, but a restaurant here in town uses carrot cake as the base for a french toast. YES! It is as good as it sounds.

  2. My favorite carrot recipe is a garden salad with grated carrots and bleu cheese. I’ve loved that since I was a little girl.

  3. I like carrots and dried cherries or cranberries glazed with butter and brown sugar.

  4. Make “oven fries”with carrots.Mix them with olive oil,red pepper,garlic,Worcestershire sauce.Bake 450,30 min.Dip in sauce made with leeks,sauteed in olive oil.Cool,process with garlic,parsley,and sour cream.Delicious!

  5. My favorite dish with carrots is my mom’s pot roast with onions, potatoes, and carrots. Delicious!

  6. Love making a medley of roasted root vegetables which includes my favorite, carrots.

  7. Remember the ancient carrot salad with finely shredded carrots, pineapple, raisins, a little mayo and pineapple juice? Still love that! Along with carrot cake – and roasted carrots as well. It’s a versatile vegetable!

  8. A must in marinara sauce. It would not be as good if the carrots were left out of the mix.

  9. My favorite recipe to make with carrots is either carrot cake or glazed carrots. I usually only make glazed carrots around the holidays so it makes them a little more special, but I love them both!

  10. My fave way to use carrots is in my meatloaf recipe, i mince them, it adds a nice color & texture.

  11. Peel carrots, but leave whole. Coat with garlic infused olive oil. Season with salt, pepper, and dill. Grill, turning frequently, until test tender. Enjoy!

  12. I love carrot cashew soup. Cooked carrots pureed with cashews and cream. So delicious!

  13. My favorite recipe to make with carrots is beef stew! I love good comfort food!
