    1. I’m really lucky here in Tulsa. In P61 there is a discount grocer that sells catfish scraps marketed as “catfish nuggets” that are significantly cheaper than fillets. I do run into an occasional very small bone, but having been born and raised in the deep south, it is catfish. It is delicious and very southern.

  1. My son and I fried up this southern winner and it was the best Catfish I have made. The ratio of the cornmeal to flour let the fillet be crispy and also light enough to make a beautiful colored golden FILET. We rounded out the meal with mac and cheese and green beans. You will not be disappointed. We used can of crisco lard. Mouthwatering and every bite was yummy.
